Recipe Tuesday: Butter Cupcakes

Tuesday, January 24, 2012

Last Saturday was Leroy’s 8th month of existence celebration and we celebrated it with noodles (pancit) and butter cupcakes. I found the recipe online, made some variation and love the result so much. Everyone at home loves it specially Leroy!

This is the kind of recipe that is very easy you can never make a mistake!

Butter Cupcakes

Yields 12 cupcakes

Ingredients

½ cup unsalted butter
2/3 cup sugar
3 eggs
1½ Sifted flour
½ teaspoon baking powder
¼ teaspoon salt
¼ cup powdered milk
¼ cup water

Direction:

-         Preheat oven at 360 degrees
-         Cream butter and sugar
-         Add eggs
-         Mix all dry ingredients and sift
-         Combine and add the water
-         Line 12 muffin cups with paper liners

-         Bake for 35 minutes or until toothpick inserted comes out clean.
-         Cool and frost or serve it naked like mine.

I love the cupcakes so much. The outer layer is crisp but the inside is soft and sweet.

Yes it is very easy another thing i like also I only used one bowl for the recipe!

The instructions may give you an idea of two bowls but i actually used just one!

*** Directly sift the dry ingredients to the main bowl!
