Chicken Empanada

I have recently been counting my calories as part of my weight loss journey. And ever since I started paying more attention to what I eat and been going to the gym at least 2 – 3 times I week, I have lost 8 pounds already!

I lost those 8 pounds in a span of one month which we all know is at a healthy rate. 

I have been scouring the internet for delicious and healthy meals that is low on calorie and friendly on the pocket. One of my favorite lunch this days are this flaky Empanada that is 143 calories per serving only. Now how great is that??? 

And the best part is, you experiment with different fillings- may that be different kinds of meat or vegetable! And it’s very friendly on the pocket at 20 PHP per pockets! Now how great is that? 

Recipe for the flaky dough is from Marian Blazes! Cut the dough recipe into half.!

Filling: Makes 8 regular sized empanada!

½ cup ground chicken 
2 tbsps oyster sauce 
1 tbsp cornstarch 
1 large onion 
1 tbsp brown sugar 
¼ cup water 
2 tbsps oil 

Salt and pepper 
  •  Vegetables may also be added like potatoes and carrots. 

Instructions: 

1. In a wok heat oil and add onion until translucent. 
2. Add chicken and brown a little. 
3. Mix in Oyster sauce, sugar, salt, pepper and mix carefully. 
4. Mix water and cornstarch and pour into wok. Mix until think and cut the heat.


Preparing the Empanadas!

Knead: Turn dough onto lightly floured surface until smooth.
Divide: Divide dough into balls in a size enough to hold inside your closed fist.
Fill: Roll out each dough into a an 8-inch round. Divide filling    evenly among rounds, spreading it over half of each and leaving a 1/2-inch border.

Fold: Brush border of bottom halves with water; fold top halves over filling to enclose completely. Press edges to seal with your fingertips, then crimp firmly with a fork.

Baked for 20 minutes at 250 degrees. Let cool for 5 minutes before eating. best eaten the nest day when its cold with hot coffee.

Last Saturday was Leroy’s 8th month of existence celebration and we celebrated it with noodles (pancit) and butter cupcakes. I found the recipe online, made some variation and love the result so much. Everyone at home loves it specially Leroy!

This is the kind of recipe that is very easy you can never make a mistake!

Easy Cut-out Cookies

This recipe is my favorite cut-out cookie. I found the recipe online and after trying it, I decided that it's a keeper! 

Cookies:
6 tablespoons soft unsalted butter
1/2 cup sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Leche Flan

Other dessert that I prepared last Christmas and New Year is Leche Flan. Everyone knows what a leche flan is but upon reading its wiki page I just found out that in other parts of the world it is called Crème caramel!
In other countries, Crème Caramel calls for a number of ingredients compared to the one made in the Philippines and because of this I like the one made in the Philippines better. Maybe the international version taste better with its many ingredients and I hope taste them all but for now I will share to you all a recipe that my brother likes so much he can east a layer in one sitting.

Blueberry Cheesecake - 1st Attempt

I always loved blueberry cheesecakes and have tasted a few over the years from different restaurants. One that I really like is from Missy BON BON of Cagayan de Oro City.
Days before Christmas, my sister and I were talking what we will cook for Christmas and for dessert she suggested that we (try) make blueberry cheesecake. I never made one before but I was curious if how this wonderful no bake cheesecake is made so I made a research online. I found thousands of recipes and out of the thousands I have chosen another Filipina blogger - My Mom-Friday. I really like her recipe but had to make some changes because of the difference in ingredients.

Before my Leroy started eating solids 2 weeks ago, I have already decided to try (as much as possible) to feed him only natural and home-made goods. I never thought it to be so hard. I have to constantly think of new flavors to interest him, have to make sure that everything is clean and cooked properly or indigestion my occur and you don't want to see your baby crying in pain - trust me, it sucks.
